Message from the Editor

We made it to May, and just around the corner is the long awaited Tournament of Champions — May 13 & 14th — to be held at Bitsy Grant Tennis Center in Atlanta. Hard to believe it’s already our 2nd TOC! For those who did not attend last year’s event, be prepared for a great time, especially on Sunday when the “really big trophies” trophies are handed out.

All those long, hard-fought matches have become a reality — the winners have now earned a spot in the playoffs, and hopefully the finals. GREAT job to everyone who played their hearts out to make it this far.

Next up — the Visionary Tennis Summer League which commences on July 10th. Deadline to sign up is June 26. Let’s make this summer the best yet!

Remember: Work hard ... play hard ... and just have fun!

Healthy Eating Out in Atlanta — Dress down that salad!

Story by Carolyn O'Neil, as told in the Atlanta Journal-Constitution's “Better Health” section.

Good for you! You're going to order a salad. Whether you're trying to cut calories to lose weight or add a few more nutrient-rich veggies to your diet, you are headed in the right direction. But, when dining out, watch out for salads that are the healthy menu version of a wolf in sheep's clothing. Make sure that vegetables get the top billing and aren't pushed to a secondary role, with heavyweights such as cheese, egg, meat, fried croutons and salad dressing grabbing all the attention. (How did those crunchy Chinese noodles become part of the salad world anyway?)

Here are some vital statistics on salad staples to help you choose among toppings that restaurants are offering. Eat freely from this garden: lettuce, spinach, arugula, endive, watercress, cucumber, green peppers, broccoli, celery, sprouts, cabbage and radishes. They rack up only 25 calories a cup. Vegetables such as artichokes, tomatoes, beets, carrots and onions are perfectly acceptable additions at 50 calories a cup

How much chopped onion do you need anyway? Consider the simple garden salad. It's better if it's more complex. More veggie variety in the bowl ups your consumption of a greater variety of vitamins and other plant nutrients.

The trouble starts when salad recipes are dolled up with ingredients not found when you look up the word "produce." For instance, each ounce of crumbled blue cheese, shredded cheddar or bacon bits adds at least 100 calories. Having said that, it's OK to enjoy a Cobb salad or chef's salad. Just make sure these entree salads aren't overloaded with meat, egg and cheese. Think of these toppings as accessories. No one looks good in an outfit overwhelmed with too many baubles, bangles and beads. And, sure, avocados, olives and nuts contain good-for-you mono-unsaturated fats, but if cutting calories is your goal, use them only as delicious accessories, too.

Lighten up!

Here's how to keep your salad light:

  • Ask for it to be topped or tossed with minimal dressing.
  • Ask for dressing on the side and dilute it with lemon juice or vinegar.
  • Dip your fork into the dressing and then pierce bites of salad.
  • Read the nutrition facts on fast-food dressing packets; try to use only 2 tablespoons.
  • If an entree salad is large, split it with a friend or have the server put half in a carryout container before bringing it to the table.

Chef of the Month — Jérôme Grilhot — Pastis Restaurant, Roswell

Close your eyes and imagine swimming in azure Mediterranean waters, waking to the smell of freshly baked breads and inhaling the fresh Provence air every day on a sunny hillside in southern France.

Welcome our May Chef of the Month, Jérôme Grilhot. Jerome was born in Provence, and at an early age began enjoying the fruits of labor at his uncle’s restaurant. This was the beginning of Jérôme’s career as an executive chef. Southern France was a mecca for holiday visitors and required his entire family (mother, father and brother) to share the duties of running his uncle’s restaurant. Somehow, young Jérôme found time to participate in one of his favorite sports, tennis.

The thought of cooking for a living was intriguing to Jérôme; but he also had the travel bug, and set his sights on seeing the world before he turned 30. After spending a few months in Corsica, he ventured off to London where he apprenticed at a two-star Michelin restaurant for two and a half years, then on to Malaysia and Bali where he enjoyed eight glorious months of cooking, sailing, soccer and bicycling (and lots of tennis!). Sports were a big part of Jérôme’s life and he continues today to enjoy the sports that were a large influence on him.

By 1992, Jérôme was ready to conquer yet another country — this time the United States. Atlanta became his new home, and today you can find Jérôme putting smiles on the faces of all who dine at Pastis, where he is the executive chef. Along with his sous chef, Jérôme ensures that anyone dining with him will leave with a smile on their face knowing that this French restaurant is “as good as it gets”. From the south of France to Atlanta, Georgia, we welcome you, Jérôme, to our neck of the woods. Come see for yourself why Pastis is fast becoming the hotspot of Roswell!

Restaurant of the Month — Pastis

Sitting snug between the art galleries and antiques shops of old Roswell, Pastis is a deceptively large space that's sophisticated and stately. Linen-covered tables line the fresco-colored walls, and on weekends one can listen to the sounds of jazz while dining on bistro classics such as Nage Pastis, which consists of fresh fish and shellfish in a saffron tomato broth. Other specialties include the Bistro Pastis — a grilled ribeye with homemade pommes frites — and don't forget to leave room for their sumptuous desserts. The menu is filled with French and American dishes sure to please any palate.

The upstairs has lofty ceilings and hardwood floors that open up to a spacious dining area which extends to the outdoor deck overlooking historic Roswell. And for those ladies looking for a "fun" night out, Pastis offers Wednesday night special martinis, complimentary appetizers (at the bar) and a jazz duo from 8 until 10pm. Sunday Brunch is served from 11:30 am until 2:30 pm. Bring the whole family for a special treat!

Pastis offers a full bar replete with many French and American wines. The restaurant's namesake liqueur, flavored with anise and tempered with a bit of water, makes an excellent pre- or post-dinner drink. Reservations are recommended.

Visit their website at www.roswellpastis.com to check their menus and wine lists, purchase gift certificates, or just find directions to the restaurant. Private parties for up to 75 are also available.

Open 7 days a week. Monday - Thursday, lunch is served from 11:30 to 2:30; dinner from 5:30 to 9:30. Friday and Saturday lunch is 11:30 to 2:30, dinner 5:30 to 10:30. Executive Chef: Jerome Grilhot

Dream House — Dare-To-Share

Dare-to-Share is a 501-c3 registered nonprofit charity whose main goal is to raise funds for children’s charities. Since July 2002, they have given over $500,000 to various charities. Dream House for Medically Fragile Children, Inc. received $5,000 as a gift two years ago. But this year, Dream House is one of 7 charities selected to receive funds from their events. So far they have had a walk-a-thon and ladies high-tea social. The May 12th event will be a Casino Night (which is explained in the attachment). What I am hoping for is some of our board, supporters and friends can make it to this event.

On Court   with Jay Jordan, M.E.

Summer’s Heat

The weather is warming and the courts are heating up, so I thought this month would be a good time to examine some things we can do to improve our chances of winning during the summer months. Much of what I will talk about has been discussed before so I am going to attempt to touch on the little-known aspects of heat management.

First let’s dispose of some myths.

Myth #1: Water is as good as a sports drink.

This is only true if your match lasts for an hour or less. Furthermore, the hotter and more humid, the sooner you will need the sports drink. Research has shown that carbohydrates already broken down in their simplest form (glucose) mixed with fluids are passed through the stomach and into the small intestines , and subsequently absorbed into the bloodstream faster than water alone. This means quicker re-hydration and internal cooling during competition.

And what is the exact mixture we should use? Well that depends on the height and weight of the individual, whether or not the stomach is empty, each individual’s chemical and hormonal makeup, and ... well, you get the picture. It is very complicated. The pros often take blood samples during practices and have them analyzed at various time to see the results of what they are ingesting. There are, however, some things we can do.

First, keep your stomach as empty as possible before a match without sacrificing energy. Don’t eat a large meal within 2 hours of match time, and stay away from meat and fats before a match. (These can take hours to digest. If they are still in your stomach when you play they will absorb water, take energy to digest, and slow the movement of fluids and glucose into the small intestines where they need to be absorbed.) Energy bars made for marathon runners and triathletes are usually good choices. Find ones that have the carbs already broken down into glucose. For drinks, diluting the popular energy drinks to two thirds or three fourths energy drink and the remainder with one third or one fourth water has worked well for me.

The popular off-the-shelf energy drinks have too many carbohydrates and take too long to get through the stomach. When I dilute them they work great. When you choose a drink, it doesn’t hurt for it to have a little potassium and sodium as body levels of these can become depleted on a hot muggy day. This can interfere with your body’s ability to transport energy and fluids, which can lead to reduced athletic ability and eventually, if left unchecked, cramping.

Each muscle group is made up of a protagonist and an antagonist muscle. One provides the movement (protagonist) while the other (antagonist) provides the support. If you only exercise the group that mimics the motions you use in tennis, you'll become stronger and hit the ball harder — but because you have neglected the supporting muscles, you'll leave yourself open to severe injury. The protagonists will become much stronger than the antagonist and eventually they will literally pull themselves apart.

Myth #2: Drink when you are thirsty.

You should be drinking well before that. If you are thirsty, then you are already beginning the first stage of dehydration. Drinking 12 ounces 30 minutes before you play on a hot day is not a bad idea even if you are not thirsty, after that, at least on every changeover. The best way to find out how much you need to drink is to schedule a series of practices on hot days. Weigh yourself before you start and then after. Make sure you drink during practice about what you think you need.

If you weigh within 1-2 pounds under your starting weight, then you did a good job of hydrating. You can get the 1-2 pounds of water loss back that night by drinking a lot. If you lost more than 2 pounds, you need to drink more; if you gained weight, you need to drink less. Recent research has shown that over hydrating can lead to performance loss and can actually be dangerous.

In the next issue we will talk about how to actually condition yourself for tennis in the light of recent sport science research. Thanks for reading and stay tuned as next month’s article will continue debunking some myths On Court in the summer’s heat.

The Last Word...

Somewhere along the path of ‘growing up’, the essence of play becomes more and more elusive, like a dream’s receding memory. Many of us give in and allow the sheer fun of life to be discredited, forced to cower behind a wall of ‘reasonable expectations’.

But once in awhile, something rekindles that spark, awakens that child to come out and play. It is that moment that gives us all hope.

Visionary Tennis is all about that moment, and about bringing it back to you again and again and again. We want you to play. We want to remind you that ‘playing tennis’ really is just that. It’s not a job, it’s not a discipline —
it’s a game.

Know anybody else who’s into sports as much as you? Why not forward VISIONS to them and spread the word!
